Klaue, you crack me up. You're like a kid in a candy store. I see some issues with the motion system, but its a compromise for money. It is a really well thought out design. I just don't know if it will confuse your inner ear or not.
For example, if you pitch up in the sim cockpit, the cockpit pitches back. You as the pilot would feel being pressed back against the backrest and lighter in the seat. This has more in common with nosing the aircraft forward than a climb.
In a real aircraft, you'd feel yourself being pushed towards the front of the engine if you're loosing airspeed (most common) or pushed into the backrest if you're gaining airspeed and pushed down into the seat (centrifugal force)
Although they do seem to be really happy about it. This type of motion simulation may be like trackir where its close enough that your brain makes it a reality. However, I wouldn't invest too much money into it till you determine if it will make you sick or not.
Plus I'd use pots or LVDT's in the control linkage, a 200+ lb weight swinging a joystick base that was only meant to take a 5 lbs of force seems like a bad idea to me. Even if you can protect it against over extension. You break a pot you're out a couple bucks, break the joystick gimbal system you're out $50.
